  • WHY: Siembra Valles is the import label for Tequila aficionado and advocate David Suro, contracted from one of Jalisco's best distilleries: NOM 1123 Cascahuin. The ancestral edition uses production methods that would have been used a century ago to make a blanco histórico, with an intensity of flavor and unique character unlike anything in today's market. Smoky, savory, earthy, and bright, there's a lot to take in with every sip.
  • HOW: Using production methods more akin to mezcal, the Siembra Valles is made by roasting the blue agave piñas in an underground pit, macerating by hand, and fermenting via natural air-born yeast in large wooden vats with the fibers included. Distillation is done in a wooden Filipino-style still and the spirit is rested in glass for six months before bottling.
  • WHAT: Located in El Arenal, Jalisco, NOM 1123 Cascahuin is run by the Rosales family, known for taking Tequila so seriously that they will shut the down the distillery if the available agave doesn't fit their standard.
