I have been craving good Chinese food where they have Dim Sum carts rolling around the restaurant. With that in mind, I considered wines that would pair with dishes typically served at such an establishment, as well as my personal favorites. With so many combinations, finding one wine that generally pairs well with everything is a challenge. My strategy is to choose a few main dishes and focus on those. Also, I wanted to challenge the fail safe wines that every Sommelier would typically recommend.
Pas Touche, which means "hands off"—exactly how I feel when people try to force me to share my favorite dumplings—is actually their winemaking philosophy: natural, with the least amount of human interaction possible. This Cabernet Franc is organically farmed, certified vegan, and fermented with native yeasts in cement vats with no chemical additives or added sulfites. The result is a naturally lean, medium-bodied red with enough weight, flavor, and acidity to match the bold flavors Chinese food offers.
On the palate, black raspberry, red cherry compote, black tea, strawberry, dried hay, and mellifluously sleek going down.
