Nikolis's 2019 Amarone della Valpolicella Classico is crafted through the traditional appassimento process — grapes dried for three months in the fruttaio before spontaneous fermentation with indigenous yeasts in steel tanks over 25 days in winter. The wine is then aged 30 months in Slavonian oak barrels followed by six months of bottle aging, resulting in a deep ruby red of remarkable depth and complexity. The bouquet is harmonious and elegant with notes of dried fruit, jam, underbrush, walnut husk, and leather. The palate is balanced, rich, and austere with a long, lingering finish — a classic expression of one of Italy's most celebrated appellations.
