Mature organic agave is slow-cooked in low-load masonry ovens, rested, and gently milled using a large volcanic stone tahona, a process that extracts rich, complex flavors. Fermented spontaneously with wild yeast and double-distilled in copper pot stills, this blanco tequila reveals bright, fresh notes of cooked agave, white pepper, green apple, and a hint of damp earth, with a delicate sweetness that makes it ideal neat or on the rocks.
