In the far western corner of Andalusia, Spain, lies the ancient province of Huelva where sherry-makers Jose y Miguel Martin 'cooper' casks with age-old craft and care before they are seasoned by their wineries in Jerez. Isle of Harris is proud to source their carefully chosen Oloroso butts directly from them since 2015. Oloroso sherry's influence on the wood in imparts an unmistakable richness and boldness to this spirit after a full maturation in the Isle of Harris warehouse.
