Consisting of an indigenous white varietal Debina (roughly 97%) and a red variety, Vlahiko (3%), and undergoing about 12 days of skin contact, this wine pours a gorgeous amber-orange color. This semi-dry wine has a complex aromatic profile, featuring notes of baked apple, butter, apricot, and warming spices like cinnamon and cloves. Its light, frothy carbonation and mild oxidation take it to the next level, drinking like a cross between a natural wine, hard apple cider, and a sour beer. With its unique balance of gentle sweetness and a slightly tannic finish, it’s a truly versatile wine that screams for a cheese plate featuring nuts and dried fruits. This wine is a little off the beaten path but brings so much to the party, definitely “cork dork” approved.
