To the natural winos, sake enthusiasts, Celiac-restricted comrades, and everyone in between, check this out! Fukucho Seaside Junmai Sparkling Sake from Hiroshima is a great little find for you all. The master brewer Miho Imada uses a little white koji while employing the Pétillant Naturel method, and then the sake undergoes a second fermentation which creates its sparkling style. On the palate, it's Brut-style with lively acids only a pét nat could deliver, citrus florals, and fresh crisp pear and apple notes in the tight, dry finish.
The packaging gives you such a great little featurette about this product. This sake comes in a little clear bottle with a pretty blue label featuring cute drawings depicting local Hiroshima sea life and concurrently the pairings it complements. You can see the sediments floating at the bottom of the bottle reminiscent of sea foam. This sake was made with great intention and love for the homeland. This woman master brewer was definitely after my own heart, and I hope that she captures yours as well!
