Haven't tasted it yet, will update when I do. Beautiful bottle and juice. It's colored with Clitoria ternatea (yes, that's the scientific name, and for exactly the reason you are thinking, lol), aka butterfly pea flower. The anthocyanin pigments that produce the amazing blue-violet color are pH sensitive, so it will turn pinker with acid, like citrus juice or tonic. I've used C ternatea to infuse gin before, so I'm looking forward to this. It should make awesome Aviation cocktails.
This is a superb gin that has an added bonus for showmanship. No only does it make a great G&T, but it turn a shade lighter, almost lavender when you apply tonic. Wows them every time.
