As I type this up, I am thinking about my birthday. One of my favorite cakes is a Black Forest Gateau: rich chocolate sponge cake layers, Kirsch brandy soaked cherries, and fluffy whipped cream. When made well, the cake layers are typically brushed with cherry liqueur. This medley is wonderful to eat, but rather difficult to pair with wine. There are so many factors to consider such as the cake's density, the whipped cream's lightness, and the cherries' sweet and sour nature.
Angelo Negro Birbèt is made from the Brachetto grape in the Roero region of Piedmont, Italy. This wine undergoes partial fermentation from the grape must to maintain a certain level of sweetness. This wine has a light, sparkling (frizzante) quality that lifts it making it more vibrant than its dark red cherry color suggests. Then the acidity refreshes your palate with each sip. This wine's featherweight body, creamy and frothy foam, and pleasant red fruitiness make it a great pairing for a Black Forest Cake.
In general, it's a great after dinner wine for the hot summer months. I highly suggest bringing this chilled bottle to the next outdoor party.
