Honoring our founders’ vision of pushing flavor forward, the MM distillery team asked themselves how taking better care of nature, specifically through the farming process, could yield more flavorful whisky. Through this process, Star Hill Farm Whisky was born. This whisky was created to unlock unprecedented flavors in whisky – and maintain as much flavor as possible from soil to sip – through sustainable agriculture, choice of grain varietals, soil health and other regenerative farming practices. Unlike Maker’s Mark, we aren’t looking for consistency; we are looking for what nature gives us each season and truly celebrating nature as the maker.

It only fitting for us to use Maker’s Mark’s iconic soft red winter wheat, and through careful blending and ageing amplify its unique flavor. Grains planted in the Spring of 2015 and 2016 were harvested and distilled in the Fall of 2016 and 2017.

The 2025 release is a marriage of two mash bills that shine a light on our signature soft red winter wheat: one using 70% soft red winter wheat and 30% malted barley (Maker’s Mark’s mashbill uses these grains as well) and the other using 100% malted soft red winter wheat By taking corn out of the mashbills, we highlight the impact of wheat on the whisky and showcase how much mouthfeel and flavor the wheat contributes Blending the two mashbills creates a complete and complex whisky.
