A pet nat from the Hilt??!! From the moment we found out this wine existed, we were over the moon with excitement. The Hilt makes some of the best Pinot Noir and Chardonnay wines in all of California, let alone the Santa Rita Hills, and given the acidity levels in their wines, we knew the pet nat would be racy and riveting before even tasting it. Made from 100% pinot noir, the wine is the color of fruit punch in the glass with plenty of fine bubbles to give it lift. The acidity is front and center, but it's never tart or crunchy. It's a refreshing, red fruited delight that isn't nearly as fruity as you think it's going to be, but is equally as complex and intriguing as any Hilt still wine.
