Pal’alma is the export brand for Almamezcalera, the bottling label from Mexico City’s notorious “Indiana Jones of Agave”, Erick Rodriguez. Equal parts historian and adventurer, Erick travels to remote production sites all over Mexico sourcing unique agave distillates. Deeply committed to local traditions, Erick’s collaborators are all bona fide local legends in their own right. Working with just a single mezcalero per state, including several states (such as Nuevo León and Sonora) not currently acknowledged under the “Mezcal” Denomination of Origin, Erick bottles tiny batches of truly thrilling, uncertified “aguardiente de agave.
Made by maestro mezcalero Asunción Matilde Varga and produced in Puebla, Mexico, this incredible spirit is made from 100% Espadilla (A. angustifolia Haw) with harvested capón (the reproductive stalk cut to concentrate sugar in the heart) for less than 1 year. Cooked in a conical earthen oven & milled by hand with axe and fermented in a shallow stone well, the spirits is distilled only once using a hybrid ‘Filipino style’ clay & wood tree trunk still with a copper coil condenser. Thick aromas of cacao, corn silk, and caramel give way to a savory palate of dry soil, cracked black pepper, and epazote.
