Laurent Pillot and his son Romain, the fifth and sixth generation of the family at the estate, grew fruit for this beauty in their estate-owned vineyard adjacent to the Mercurey zone in the Côte Chalonnaise. They vinified it with a gentle touch, and no new oak, in their family's small vaulted cellar with sections dating to the 13th and 17th centuries. Fragrant and knock-out gorgeous, this is unadorned unoaked red Burgundy at its essence.
This deep ruby-colored Burgundy has fragrant aromas of strawberry tarts and ripe bing cherries with hints of toasted pine-nuts and pink violets. Fully ripe, the generous red-fruit palate shows strawberry preserves and baked cherries with a long mouthwatering finish of ripe fruit and a refreshing touch of toasted nuts, spice, and cherry pit. Ripe, vivid flavors linger and cling to the palate with "pinot-sap" texture and freshness that urges you to take another taste and another glass.
Pure and nuanced, this expression of a great pinot noir vineyard makes a fabulous partner to poultry dishes, from simple roasted chicken to Thanksgiving turkey with all the trimmings. Delicious immediately, it improves with an added layer of depth after airing 30 minutes in the decanter. Enjoy it now and over the next 5 years.
