Agua del Sol is intended to make heritage agave spirits accessible to rural communities again by selling them locally in five and ten-liter containers and not going through the CRM’s expensive “mezcal” certification process. Agua del Sol provides the opportunity for collaborating with multiple mezcaleros beyond the Cuish cooperative and who are members to the Maestros de Mezcal organization. The project arose at a meeting of master mezcaleros at the Mezcaleria Cuish and came to fruition under the Agua del Sol label.
