"Picpoul de Pinet has been a winegrowing region for over 2000 years. Being from the Languedoc-Roussillon region in France, it is one of the only wines named for the grape and not the place it is from. The wine comes across as light bodied, dry, lean, and crisp with ripe flavors. It pairs best with shellfish and pasta with olive oil. To reduce the risk of oxidation, the grapes are picked when the temperatures are the coolest at night. They are then put in stainless steel vats and bottled in the spring. I find it a nice alternative to Muscadet when serving raw oysters."
