Lots of woody oak on the palate, balanced by sweet baking spices and vanilla on the finish with the boldness you'd expect at 100 proof.

HOW: The aging conditions in upstate New York are similar to Kentucky, but Finger Lakes distillery does heat the rick house in the winter to make sure it gets ample cold and hot fluctuation, as the winters tend to last a bit longer. The whiskey comes off a column still attached with a thumper at 130 proof, but the casks are filled at 100 proof in order to replicate the older traditions of Beam and Wild Turkey from the 1970s. While some evaporation does occur, ultimately less water is needed to cut the whiskey down to 100 proof when it's time to bottle.

WHAT: Finger Lakes Distilling not only makes great whiskey, they're classified as a New York State Farm Distillery; a classification reserved for small operations making handcrafted products. They use locally grown fruits and grains to make their spirits, and they believe in minimizing waste in the process. Spent grains from fermentation are used by local farmers as animal feed. The oak floors of the distillery are reclaimed siding from a tobacco barn in Kentucky, and the wood bordering the tasting bar also used to be part of a local barn.
