  • WHY: Willett’s Pot Still Reserve Bourbon is now made 100% in-house at the Willett Distillery from a wheated recipe that mimics the sweetly-spiced and creamy nature of other genre favorites like Pappy Van Winkle and Weller 12 year. At roughly five years of age, it’s one of the few instances where the quality of the whiskey itself matches the beauty of the bottle.
  • HOW: Using a mashbill of 65% corn, 20% wheat, and 15% malted barley, Willett’s wheated recipe substitutes out the spiciness of the rye in favor of creamy wheat. Instead of peppery herbaceous notes, you get cinnamon red hots and lots of vanilla.
  • WHAT: After years of purchasing whiskey from other producers and creating blends like Rowan’s Creek and Noah’s Mill, the Kulsveen family rebuilt the Willett Distillery in Bardstown, KY and began producing all of its labels in-house. Originally founded in 1936, Willett began distilling again in 2012, rejoining the Kentucky Bourbon Trail and establishing a cult following in its wake.

Bold yet smooth

Not sure why there is so much hate with this Bourbon. It is well-crafted, with big bold flavors, but at the same time, it is smooth and complex. I would wait for at least 6 weeks after opening to let it breath before judging it. 4 months later would even be better. Just my preference; your mileage may vary.
